This is called a topinambour or Jerusalem artichoke. When I first saw it, someone was buying a whole rack of them from this fruit and vegetable market where you can get produce en masse for 1/2 price between 6-7 on Saturdays. I asked her why she would want so much and she gave me a short explanation, mostly because it's delicious. Then, at the marché with Margaret, we inquired about it and the vendor and a local restaurant owner touted it's flavor and even told us how to fix it. It was just meant to be. I'm in love.
